Here comes the sun. The fun days of summer are upon you as the kids hang with their friends and you plan for backyard barbeques and summer family outings. With so many teens AND adults giving braces or Invisalign treatments a try, you want to create food that is easy on braces and everyone will love! To help you plan for those summer get togethers, the doctors and staff at Owl Orthodontics in Amherst and surrounding communities have put together a few of their favorite braces-friendly recipes your family and guests are sure to enjoy.
A 5-star recipe from the Food Network’s site, courtesy of Tyler Florence, this potato salad-plus dish is great for entertaining large groups in your Amherst backyard or your summer family reunion!
2 pounds small Yukon gold potatoes
2 large eggs
1/2 bunch sliced scallions
2 tablespoons drained capers
1 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup finely chopped dill pickles with 1/4 cup juice, about 2 pickles
1/2 small red onion, chopped
2 tablespoons chopped fresh flat-leaf parsley
1/2 lemon, juiced
freshly ground black pepper
Extra-virgin olive oil, for drizzling
Put the potatoes and eggs into a big saucepan of cold salted water. Bring to a simmer. After 12 minutes, remove the eggs with a slotted spoon and let cool. Continue cooking the potatoes until a paring knife poked into them goes in without resistance, about 3 minutes longer. Drain the potatoes in a colander and let them cool.
Reserve some scallion greens and capers for garnish. Meanwhile, stir together the mayonnaise, mustard, pickles and their juice, onion, remaining scallions and capers, parsley, and lemon juice in a bowl large enough to hold the potatoes. Peel the cool eggs and grate them into the bowl. Stick a fork into the potatoes and lift them one at a time out of the colander. Break up the potatoes by hand into rough chunks, add them to the bowl and toss to coat with the dressing. Season to taste with salt and pepper. Drizzle with a little olive oil before serving.
Summer is the time for fresh fruit. Check out this easy, delicious and healthy fruit salad from Cooking Classy. Easy to eat and delicious, teens with braces are sure to enjoy!
1 lb fresh strawberries, diced
1 lb fresh pineapple, diced
12 oz fresh blueberries
12 oz red grapes, diced into halves
4 kiwis, peeled and diced
1 (15 oz) can mandarin oranges in juice, drained well and sliced into halves
2 ripe bananas, diced*
Honey Lime Dressing
1/4 cup honey
2 tsp lime zest (zest of 2 medium limes)
1 Tbsp fresh lime juice
Add all fruit to a large mixing bowl.
In a small mixing bowl, whisk together the honey, lime zest and lime juice.
Pour over fruit just before serving and toss to evenly coat (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating).
*The bananas aren’t pictured. I decided to add them later on because I love the sweet flavor they add.
Popular barbeque restaurants will have nothing on your Amherst backyard parties when you serve these easy-to-eat wraps to your family or guests. We borrowed this recipe from Tastes Better From Scratch and it’s healthy, quick to make and perfect for braces wearers.
1 Tbsp olive oil
2 boneless, skinless chicken breasts, cut into bite-size pieces
salt and pepper
1/2 cup barbecue sauce
1/2 cup shredded mozzarella cheese
2/3 cup chopped pineapple, fresh or canned
1/4 of a red onion, chopped
1 romaine heart, chopped
1/4 cup fresh chopped cilantro
4-5 large wheat or white tortillas
Heat oil in a large skillet over medium high heat. Add chicken pieces to the pan and season with salt and pepper. Cook, flipping once until chicken is cooked through and golden brown. Remove pan from heat.
Add barbecue sauce to the pan and toss chicken to coat.
Place tortilla on a plate. Layer with a spoonful of barbecue chicken, cheese, pineapple, onion, chopped romaine and cilantro.
Roll, burrito style and secure with a toothpick. Serve immediately.
There are several versions of this delicious dessert out there, but this is how we make it here at Owl Orthodontics. With a cookie crust and layers of chocolate and whipped cream goodness, it’s requested at almost every orthodontic work party and family event.
1 regular-size pkg. of regular Oreos cookies
1 stick butter/margarine (melted)
1 pkg. regular Philadelphia Cream Cheese
3 T. milk
5 T. sugar
3 c. milk
3 pkgs. chocolate pudding (we prefer chocolate fudge)
2-8 oz. tubs of whipped topping (or one 16 oz tub)
First Layer: Crush Oreos either in a gallon-size ziploc or a food processor.. Melt butter/margarine. Add to crumbs until all crumbs are moist. Press into bottom of 9” x 13” pan. Put in fridge to set up while making the next layer.
Second Layer: Mix cream cheese, 3 T. milk and sugar until as many lumps as possible are smoothed out. Fold in 8 oz. of whipped topping until well mixed but not liquified. Smooth over crust layer. Place in fridge until firm. Once this layer is firm, you can start the third layer.
Third Layer: Make pudding as you normally would but with 3 c. milk. It will thicken, so spread as quickly as possible over firm cream cheese layer. Place in fridge until just before serving or taking to event. (Can be made the night before.)
Fourth Layer: Just before serving/taking to event, spread 8 oz. of whipped topping over pudding layer.
